60 % Semillon
30 % Sauvignon
10 % Muscadelle.
The wines of the cotes de BERGERAC MOELLEUX (medium-sweet) come
from the blending of the same varieties as the dry whites. But the comparison stops
there. The mellow cotes de Bergerac are sweet wines produced from over ripe grapes,
which gives them their alcohol strength and sweetness. They reveal all their full
flavours around 8/10 ° C.

The vinification :
Type of vats : stainless steel vat.
Pressing – decanting – maceration of the juice at a cold temperature.
Selected yeasts and fermentation up to 18 ° C.

Ageing :
20 % of the production is kept in oak barrels – the remainder in stainless
steel vats.
Length of time : 18 months.
Filtering : special natural filter to clarify wines.
Type of bottles : heavy

Tasting :
Lovely pale, fresh, lively bright yellow-white colour. The fresh, fruity nose expresses
aromas of apricots and dried figs, with an acidulous lemon note. Supple, lively, and
then rounded and mellow in the mouth, developing pleasant fruity aromas with good
length. Good for five or six years.
Most enjoyable as an aperitif, or to accompany any white meat, desserts, fruits
salads, strawberries, melons…… try with Roquefort cheese….. a delightful
experience…….
